BBQ Jack Chicken
Ingredients
- 1 medium eggplant (about 7-inches)
- 2 medium cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/4 cup sesame tahini
- 1/2 tsp. cumin
- 1/2 tsp. salt
- black pepper and cayenne, to taste
- olive oil
- 4 - 6oz Chicken Breasts
- 4 oz Pepper Jack Cheese
- 1/2 cup BBQ Sauce
Directions
Slice chicken lengthwise 3/4 through the thickest part of the breast to make a pocket.
Fill pocket with 1 oz of Pepper Jack Cheese and seal seam with metal or wooden skewer.
Spread with BBQ sauce and grill for 6-8 minutes per side.
