Roasted Broccoli

My favorite way to eat this veggie! So simple.
Preheat oven to 400 degrees. Cut florets into med pieces, peel outer fiber of stalks and cut into french fry size. Place on cookie sheet, pour some olive oil over the top and rub in a bit. Roast about a half hour, turning once or twice. They are done when the florets start to blacken a bit...don't worry that you are burning them, it tastes great. Sprinkle with a bit of kosher salt and freshly ground black pepper.
