Zucchini Pancakes
Ingredients
Salt & Drain Zucchini & onion for at least 30 minutes. Blot with a paper towel
Mix egg, flour, cheese, water & pepper. Add the zucchini & onion mixture.
Melt the butter and oil in a non-stick skillet. Drop a tablespoon of the zucchini mixture into skillet & cook until brown, turn & brown the other side.
Serve with a sprinkle of parmesan cheese on top.
