Prime Rib

Directions

Season to taste. I also cover the roast lightly with olive oil.

Bring roast to room temperature. Preheat oven to 500.

Place roast in a shallow roasting pan and season.

Cook 15 minutes per rib or 5 minutes per pound of trimmed meat. When cooking is done turn off oven, DO NOT OPEN THE DOOR.

Allow roast to remain in the oven for at least 1 hour - I usually let it sit for 2 hours.
