Easy Cajun Chicken Pasta
Ingredients

  • 1 pound boneless skinless chicken breasts (about 2 breasts), cut into bite-size pieces
  • 3 cloves garlic , minced
  • 2 Tablespoons butter
  • 8 ounces pasta pasta (such as Penne, Rotini, Campanelle)
  • 8 oz kielbasa
  • 4 ounces cream cheese , softened and cut into small pieces
  • 1 cup of light cream
  • 3/4 cup freshly grated parmesan cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt , more to taste, if needed
  • red & green peppers cut into strips
  • 2 TB Cajun seasoning to taste

Directions

  • Cook pasta according to package instructions until al dente.
  • Drain, rinse with cold water and set aside.
  • In a large pot or skillet, melt the butter over medium heat.
  • Add the garlic and cook for 30 seconds.
  • Add the chicken pieces peppers and keilbasa and season with cajun seasoning.
  • Cook for 3-4 minutes, until chicken is nearly cooked through.
  • Add the light cream and cream cheese, stirring well until cream cheese has melted and sauce is smooth, 2-3 minutes.
  • Stir in pasta, parmesan cheese, salt and pepper.
  • Serve immediately.
